Cooking Instructions

REMEMBER TO KEEP ALL ITEMS FROZEN UNTIL READY TO USE

Chicken Pot Pie
Remove from freezer 1 hr prior to reheating. Remove plastic, bake at 350 for 1 hour.

Eggplant Rollatini
Remove from freezer, place in an oven proof pan cover with your favorite sauce and bake at 350 for  45-55 minutes.

Lasagna / Mac & Cheese
Take directly from freezer, remove plastic and bake at 350 covered for 30 minutes. Finish uncovered for approximately 30 more minutes.

Baked Ziti
Take directly from Freezer, remove plastic and bake at 350 for 25-30 minutes. Chicken Fingers-Take directly from freezer, place on a baking sheet and bake at 375 for 12-15 minutes.

Complete Meals To Go
Microwave for 1-2 minutes

Chicken Dishes
All chicken dishes are completely cooked and may be eaten at room temperature, microwaved, or heated in the oven for 5-10 minutes at 350.

Fish Dishes
All fish dishes are completely cooked and may be eaten at room temperature, microwaved, or heated in the oven for 5-8 minutes at 350.

Vegetables & Sides
All vegetable may be eaten at room temperature, or reheat in the microwave for 1-2 minutes.

Bake at Home Pies
Bake at 350 for 45 minutes or until golden brown and bubbling.

Bake at Home Scones
Bake at 350 for 30 minutes.

Bake at Home Cookie Dough
Bake at 350 for 12 minutes.

Stuffed Shells

Cover in sauce, bake at 350 for 30 minutes

Ravioli

Ravioli should be kept frozen until ready for use.

  • Fill the pot with 2/3 of a quart of water and bring to a boil.
  • When the water is boiling, add a heavy teaspoon of salt and add the frozen ravioli.
  • Stir immediately so none of the ravioli stick to the bottom of the pot.
  • Cook uncovered ~7 minutes. They will float to the top when finished. 
  • Remove ravioli with a slotted spoon and drain. Add your favorite sauce or toss gently with olive oil and set aside for later use.

Pasta

Fresh pasta can be kept in the refrigerator for (7) days. Freeze if you’re not going to use before then. Remove from freezer and defrost before cooking.

  • Fill the pot with 2/3 of a quart of water and bring to a boil.
  • When the water is boiling, add salt and  the fresh pasta.
  • Stir immediately so the pasta does not stick to the bottom of the pot.
  • Cook uncovered: angel hair 2 minutes, linguini 3 minutes, fettucuini and parpadelle 4-5 minutes, extruded pasta 4-6 minutes.   

CHRISTMAS HEATING INSTRUCTIONS:

Mini Baked Brie: Reheat in the oven @350ºF for 10-12 minutes. 

Qt. Beef Bourguignon:

Simmer on low for 10-15 minutes, stirring frequently (add a little water)

Quiche: In the oven @350ºF for 15-20 minutes.

Chicken Picatta – Marsala

In the oven @350ºF, covered cook for 20-25 minutes.

Whole Beef Tenderloin: Make sure oven is piping hot. For med-rare cook uncovered @400F 10 minutes.

Beef Wellington: Make sure oven is piping hot. For med-rare cook uncovered @400F 10 minutes.

Fingerling Potatoes:

In the oven @350ºF for 10-12 minutes uncovered.

 

Frozen Hors d’oeuvres: @350ºF for 10-12 minutes.

Full Trays:

Tortellini – Lasagna – Beef Bourg – Creamed Spinach – Cannelloni

Reheat in the oven @350ºF. covered for 45 minutes 10 uncovered

(Very important to take out of refrigerator 30-45 minutes before ready to heat).

Green Beans – Asparagus – Wild Rice:

On Stovetop add 1-2 oz of water per pound and cook covered over

medium heat for 2-4 minutes -or- Microwave until warm.

Salmon En Croute: In the oven @350ºF for 12-15 minutes.

Mashed Potatoes:

In the oven @350ºF for 15-20 minutes covered. You can add a little cream or milk if needed.

 

 

Roast The Perfect Turkey

Roasting Times & Temperatures

(For an unstuffed bird)

Your turkey will be done when the thermometer reaches 160°F in the white meat.

Begin checking one hour before the end of the recommended roasting time to check readiness.  We recommend that the stuffing/dressing be cooked on the side.  This makes cooking a juicy bird easier to monitor. Make sure when you insert the thermometer that it goes into the meat and not the cavity of the bird.

Directions

(Read the directions completely before you start cooking)

  1. Allow 11 minutes per pound for approximate cooking time (for X-large birds 13 min. a lb).
  2. Allow the turkey to rest for 1 hour and come to room temperature before cooking.
  3. Pre-heat the oven at 450°F.
  4. Cook first ½ hour at 450°F then reduce heat to 350°F.
  5. Using a pastry brush, baste the bird with the wine and butter mixture every half-hour.  Frequent basting will help ensure a moist bird.
  6. With 45 minutes of cooking time remaining (60 minutes for birds 16 lbs and larger), remove the cheesecloth and foil, baste the bird and return it to the oven.  This will allow the bird to brown.
  7. Check the temperature.  Remove from the oven when the bird registers 160°F in the white meat on a meat thermometer (insert the thermometer into the meat 2” being careful to avoid any air pockets or the breast cavity)
  8. Remove from oven and let it sit for 20-30 minutes before carving.  The residual heat will continue to cook the bird

Making Gravy

Make some turkey stock using the giblets, carrots celery, onions, herbs and seasoning or buy some chicken stock.  In a saucepan, heat turkey pan drippings and to thicken the gravy, whisk in flour (you can use a mixture of corn starch with a little water) until well blended.  Whisk thoroughly to avoid lumps; let cook until light brown.  Whisk in stock and simmer, mixing continuously for at least 15 minutes.

HEATING INSTRUCTIONS

All items received should be refrigerated overnight

It’s best to bring items to room temp (30-40 minutes) before re-heating

Increase cooking time for larger quantities and/or if your oven is full

Soup & Gravy

Stovetop: Simmer on low for ~12 minutes, stirring frequently

You can also add your turkey dripping for a thinner gravy

Sides & Veggies

Green Beans w/ Orange Zest – Quinoa Pilaf

Stovetop: Add 1-2 oz of water per pound, simmer over medium heat for 2-4 minutes (this will change the color of the green beans)

Microwave: 2-3 minutes (this will keep the color)

Brussel Sprouts – Roasted Cauliflower

In the oven @ 350ºF for 10-15 minutes uncovered

Mashed Potatoes

Stovetop: add 1-2 oz milk per pound, cover over medium heat, stir frequently

In the oven @ 350ºF for 25-30 minutes covered

 

Sweet Potatoes – Sausage Stuffing Corn Bread Stuffing

In the oven @ 350ºF for 25-35 minutes covered  

Full Trays

Mac & Cheese – Lasagna – Spinach Casserole

In the oven @ 350ºF for 40-50min (covered for 35, uncovered for last 10)

 Small Spinach Casserole – In the oven @ 350ºF for 15-20 minutes uncovered

 

Dinners for 2

(Remove plastic lid and gravy)

In the oven cook @ 350ºF for 12-15 minutes
